Edit: turned off the PhysX settings and it let me proceed

Using the Windows Event Viewer, I discovered these crashes had something to do with PhysXCore.dll (version 2.8.4.8), located in the game folder under \Binaries\Win32. So I went digging around my hard drive, and discovered multiple different versions of PhysXCore.dll in the PhysX installation directory (C:\Program Files (x86)\NVIDIA Corporation\PhysX\). One of the versions was 2.8.4.11. Next, I simply replaced the older version (2.8.4.8) with the newer one.
The game seems to be working without issues now.
I'm running just fine not problems at all 3 hours into it.
My hardware and settings are as follows.
-Windows 7 64 bit
-Nvidia GTX560
-16GB Ram
-Intel I-5 760 (first gen)
Settings
1920X1080
PhysX ON
Medium settings on most
High on Detail
I think I have found the fix, I have been running the game in DX11 mode, the only way I've been able to get it to work is when I right click the game in my library.

EDIT: I played for a few hours with this solution, tried using just the regular shortcut and crashed within 5 minutes of a mission. Went back to using this solution and played for a few more hours without problems.
Running a Geforce GTX 970 PhysX version 9.14.0702 (latest), turning off PhysX ingame also solved my problem.

Did the same, it seems indeed a problem with the older physx dll's in the game directory
Replaced them with the latest version and no more crashing with PhysX on ingame.
This worked for me too, thanks. (I have a 960) To be specific, the 2.8.4.11 file is in the folder "C:\Program Files (x86)\NVIDIA Corporation\PhysX\Engine\82D8704BAB07"
