2 - Ye ye, things have messed up in the early stages of the game with the recent update, should look more realistic eventually further on.
3 - Lots of factors affecting amount of visible lobbies - too low lvl on your current hero, filter settings,... Most of the games though are private for gear legitimacy reasons. For leveling heroes, if you have only the mentioned Countess, you might find hard time progressing, getting together a set of builders (Monk, EV, Summoner, Huntress) will open much more options to choose from. With just Countess, you might try Glitterhelm Caverns, maybe even survival, on Hard perhaps Insane, later on with more builder Tavern Defense would be probably the best option, either on Hard or Insane without the need to beat bosses as it gives decent amount of xp that way, or perhaps Tinkerer's Lab.
The level rating for Kings Game is a little skewed on the high side to the point where even though it might say level 80 recommended, you could still do it. Especially if you have an EV.
Tinkerer's Lab could be difficult based on your PC - it has some optimization issues that render it super laggy - just fyi.
I typically make open servers when I play and invite all (non-hackers) to join, so feel free to add me and hit me up if I'm in-game.
View Shops - does exactly that. It shows all players who are selling gear.
Private - creates a private server just for you and anyone you invite.
Custom - this is the one you want. Normally you can choose a game to join, or you can host your own server (its down towards the bottom of the screen). Also, after you've created your public server you can change the minimum join level. You do this by going to the Map Select screen, and in the top right corner is a little tab that allows you to change the minimum level that other players need to be in order to see your server.

Tinker Lab can be relatively easy, with the right build and the necessary heroes, considering Insanse difficulty is probably as rewarding as Nightmare, if not better, you should be fine with 2k stats on your builders, perhaps lower if you decide to go for lower difficulty.
