There's also a "give up" option in the pause menu, but I don't know if there's really any difference between that and dying.

It's kind of the point of the whole game, and it's referenced in the storyline. It's not really so different from just quitting a run, except you see a corpse and a shower of gold before you go back to the hub.

you can beat the game.

When you have the gold bag upgraded to max. You keep 95%.
Dying and repeating is part of the rogue like experience.
