Also, it's not really worth killing it at all imo, until it drops more or has another purpose for killing in some future update. It only gives 4 drumsticks, 12 feathers and a screecher head (for mount, biofuel, or helmet - one use is aesthetic only, the second has other easier options and biofuel isn't worth it anyway, and the third is also aesthetic). So minus the head, a Screecher is only worth two seagulls. Two seagulls who you can easily kill with a single spear thrust. Put a birds nest or two on the ground or set up a small or medium plant plot and a scarecrow and seagulls are pretty much an endless farm(outside of respawn timer), and you won't lose arrows/materials.
Anyway with a bow, you need at least 10 stone/7 iron arrows (minimum, so more if you think you'll miss) and then wait for it to pick up a rock, after which it flies straight at you. Lead it on with an arrow shot and hit it with the arrow as it closes in, and run straight under it after, it'll miss you with the rock. Rinse, repeat.
If the Screecher becomes more valuable later though I would dig more options to fight it, like a bait trap that keeps it grounded for a couple attacks or something.
But yeah, him (Screecher) losing his grip on the rock when he takes an arrow is definitely something that should happen. It's easy to dodge (essentially if you keep running, in any direction, and just listen for his little screech he does right before dropping the rock, then you'll hear a "thump" and you're safe) but I agree, flinching it just makes sense.
