Fight from a position with a roof
1) It is the only time they fly in a straight line, allowing you to adjust the arch of the bow shot to hit them and can get 2 shots off.
2) Because you can get a better idea where they will land to pick up another rock and adjust your position for a better line of fire.
Further, the rocks are use to jump from to a lower rock or ground when the screecher drops the rock. Timing it takes a small bit of practice, but being at a lower elevation from where the rock explodes avoids all damage. I've gotten to the point where I never get hit anymore and just time hitting them the 6th and final time where they will fall on solid ground so I don't have to chase their carcass too far.

As i said, a roof is helpfull. Never stop moving works too on most islands

They are pretty easy to kill when you get the hang of it.
I don't run in circles though after fired of my bow. I just run forward and the bird always miss to hit me.
