Harder game modes are easier with multiple players, so that is one thing to keep in mind. But it seems to me that the harder difficulties are just the game's way of balancing things out for when folks want to play with friends.
All the items are lost when the joining player leaves I think.
Might want to avoid hardmode though as it's respawning is designed more with multiplayer in mind. Hardmode in singleplayer basically means no respawning after death.
(i find it peaceful and relaxing, on easy mode, where you still have to eat and drink etc to survive, but no shark attack unless you get too close and provoke it ;)
