Does it matter where the sail is placed?

No.

Ive placed mine inside a closed and roofed building. at the front of my ... raft.. It more resembles a ship now.

It will move the whole raft as if it were placed at the center of mass.

also having more than one doesn't increase speed, one sail can move a floating fortress.

Place your sail nearby your anchor and give it some space. Place that red wind flag close to your sail as well.
Keep in mind you are able to press X and remove them , but don`t let the shark destroy any foundation connected to your stuff.

The shark doesn`t attack any armoured foundation and he loves corner and edges + wood.

Once you've finished the game a few times there are some really good mods you can add. There is one called MoreSailsMoreSpeed, like the name suggests you can increase your raft's speed with more sails, engines too.
