Paddling did work but there's slight difference to 1st person: in 1st person you can change the direction of paddling merely with the mouse while in third person you turn the camera with mouse and your character does not turn so it'll continue to paddle in direction it previously did.
My character did not turn around when changing between 1st and 3rd person mode either.
Did you anchor your raft? World only exist certain radius around your raft. If raft moves far enough away from things, they will despawn, including but not limited to island you might be standing on and as island no longer exists you'll end in water. To prevent this, always anchor your raft in place when leaving your raft for any reason.
I couldn't anchor my raft as I did not encounter any stone yet. The problem with despawning occured always on my first island (I couldn't get past this point yet). The raft was in sight most of the times (I "parked" it so the waves would press it to the shore in a save spot). Maybe I wandered off to far on the island...
For paddling and fighting - for me it does the animation, but there is no effect at all, no matter how I turn the camera or change my position.
But thanks for the help, I'll try again as soon as I recovered a bit. Guess it's a matter of practice. When it works for you there must be a sweetspot somewhere.
Don't be shy reporting any issue you might encounter with the game in general.
Any errors or obvious bugs should be reported directly to the developers so they can take a look here:

But anyways, I honestly thank you! I don't get such nice and good-meant help in the forums very often with my "no 1st person" issues. I really appreciate it. Wish both of you much fun with the game!
@Martin
Man, the anchor is freaking important. I figure that my "bug" with despawning everything is because the game thinks that the raft moves on if there is no anchor set. When I used an anchor, everything was just fine. And yep, I already had that "throwing myself in" moment xD
In early game I just get barrels with the hook, to conserve it and nearby wood and plastic I just jump off the raft and swim around grabbing it until shark hits me to 50% hps, then I jump on raft and heal. I concentrate on building the raft wide, 3 deep, out to about 20 tiles.
Putting my machines on the middle row. Then you can just run back n forth picking up flotsam, and get any further away barrels.
Collect barrels to get stones, first make an anchor, but don't place on raft.. then make a stone axe. Then at next island as you approach look for metal scrap, if it's there, drop anchor, chop trees, make bow and arrows, kill shark, dive for scrap, clay, sand and seaweed. Metal and copper also, basically clear everything from the island.
Use the paddle to put one end of the raft to left or right of island, otherwise it get's knocked off it's center line, which is probably the worst thing that can happen until you get steering wheel.
Then add nets to front.. build back slowly, fending off shark attacks, killing birds via nests. Although I have shot them out of the sky as well. That was a whoop moment.
