Easy is for someone newer to the game with a slight survival portion to it. This is a great way to develop your survival skills without losing a lot of hard earned items if/when you die.
Normal is your run of the mill survival game. By the time you get to normal actual survival should be more of a matter of time and the shark (after a bit) is more of an annoyance than threat.
Hard is ...no idea as I do not play much anymore. Seems like it may be survival but is really meant for multiplayer as only way to revive is with help.
With collisions physics disabled (for stuff between island and the raft), and the raft not moving, it allows people to make larger than usual rafts in-game before stressing the processing limits.
Creative mode is more of a blank canvas for raft designs right now, which isn't bad. It is the only mode where a person can make something huge that would otherwise be a slideshow in any other mode.
