Yes, you both control your own characters on same raft in multiplayer. There is no split screen support if that's what you're asking. One player hosts others join in. Need to be Steam Friends to be able to join.
Only online multiplayer is supported so you can't play multiplayer without internet.
Host can continue game any time they want solo or multiplayer (as long as there's internet connection). If both of you want to continue same save, you can copy world save over. The saves will obviously become different if you both play solo on your own unless you play on different times and copy over the most recent save each time one of you plays. I'm not entirely sure how and where character inventory is saved though.
Game only supports online multiplayer and has no LAN multiplayer support.
You're welcome. Do make sure you set your Steam clients into offline mode BEFORE departing as AFAIK, you need to be online to enable offline mode. If there's NO internet where you're going, you may not be able to set it up there.
1a. LAN is a maybe, never tried but instructions later on.
2. There are save files located in computer folders which you can copy & send if you wish to.
3. It should work with your normal crappy network connection if it is just you two.
Have one routerbox with connection, set LAN cord 1 & 2 from that to the laptops if normal wifi does not work straight for you :)
If even that fails try using hamachi/evolve then.
You should find maps normally in C:\Users\[Your username]\AppData\LocalLow\Redbeet Interactive\Raft\User\User_[SeamUserID]\World

We wanted to switch host computers so sent the file to current host (me)
On hosting we had bad connection on location & had trouble playing in large islands so 2 computers were hooked to a small routerbox, 2 LAN cords and given 2mb/s bad connection shared.
On games like chivalry, stardew valley and terraria in steam the hamachi/evolve worked in offline too when i last tested, so thought might work in this too.
It seems like it's a no-go in the islands. Couple more questions if you are able to support @anonymous helper. The islands has internet, but it's slow and data is expensive. If we were to play online two player (just my gf and I), does that require fastish internet and does it take up lots of data? (could possibly try and tether/hotspot to phone.

You'll also have to take into consideration that if you connect to the net, your OS may try to update itself and if you let Steam connect to internet, it too may try to update itself and download any updates for the games you have installed. From what I've read, Steam game updates are a big problem as Steam won't let you play until you've downloaded the queued updates and game patches can go into multiple gigabytes in size. If your stay is not permanent, you're probably better off sticking to single player games and games that support multiplayer over LAN.
If you're staying permanently or for very long period of time, you may consider looking into GOG[www.gog.com]. On GOG games are DRM free, have offline installers you can download and use to install games when you want even without internet and (almost?) all games don't need internet to run if installed from offline installers.
I have not tested it my self but few people have on the forums have stated that Raft worked for them in offline mode. Just remember to change 'Friends can join' into 'Nobody can join' when you start the game (the option does not stick currently so you need to set it each time you play).
