Yes the escaped dinosaurs will attack people and not just the carnivores. They showed how an escaped Triceratops chased after people which were running away. They have already showed some of the animations. Like the T-Rex it looks just like in the first Jurassic Park movie when he grabs the guy from the toilet. So they do attack and eat people which will try and run away screaming but obviously won't be able to escape.

Maybe not elephants. But in nature there is such a thing as opportunistic omnivores. Herbivores may eat meat on some occasions. You can find videos on youtube about deers, cows, horses etc. eating small prey like birds, small chickens and other small animals although they are classified as herbivores. So maybe a large herbivore dinosaur might just try a human and see how it tastes like. Shouldn't be a common thing though.
