I tried to do what you said, and even then, it didn't work, because the progression of the game even being released by steam, it's still Ubisoft's save.
Interesting black hole of a glitch ....
I had so much fun in the game that I played it constantly when it got released, actively hunting achievements for the ubisoft unlocks.
When it arrived in the sale I bought it and hoped to get the all achievements done again in steam. But once triggered you can't do them again or reset your career.
When I asked them if they could reset my achievements they told me they didn't have that option yet. But I dont think they have it now either ;)
The only option they offered me was to reset my entire account and loose al extra's (the things i bought with the ingame premium currency) and I'm still considering doing that.
So long story short xD: If you want the full reset, take it up with Ubisoft and see if they'll help you. It might be possible, but no idea what you'll actually loose ingame.

Just to officially confirm ✨Saint✨'s answer, as saves are stored server side we don't have any facilities available to reset or clear progression or data.

How hard is that to understand?
I suggest you check if a game is online-only or not. Many online-only games store data on servers instead of locally. If having a local save is that important, you probably need to start checking before you buy games (that are online only).
But ultimately, there is no benefit in resetting this anyway. So I'd get over it.
Ubisoft isn't providing the game for free here. It's a AAA title with a corresponding pricetag. There's no reason for them to force single-player stuff online except to mine and use your player data, and as an anti-piracy method.
And I actually work in game dev. There are plenty of easy solutions Ubisoft could implement, but they don't because that might mean paying a programmer for a couple of hours of work.
