The Nitro Chemist is the key to helping to win the race. Burst the nitro at the headstart and should be have no problem.
I don't have any problem with boat race except for some tricky race at the ocean.

after all i only can say ..they are boats and that is how boats behave the dont turn asap they drive on/in water they dont have tiers so i can agree it is anoying but pretty realistic practise to get better or dont play with boats maybe they are not for you
use nitro during your turns it helps a bit

Yeah, definitely this or something similar.
For me, I changed it to pushing forward on my left stick on my XBox controller.
Also, try to stay out of the wake of the other racers. The wake will slow you down. Conversely, if you get another race to eat your wake you have just succeeded in slowing them down. Something to keep in mind.
My boat racing philosophy is simple and basic, I do my utmost to get out in front right off the start line. If I can get out in front and keep doing well I never have to deal with wakes from the other racers.
