The only thing it doesn't have is H-scenes. If you want to get those as well, first finish AA, then take a look at this list to see where to find the H-scenes in Acta Est Fabula.
Also It is very inconvenient and tiresome to search h-scenes AFTER you completed the game. You get only inferior experience again since h-scenes are losing their impact significantly when being watched separately, disconnected from already known story.
Whereas in case when you play Fabula first - you lose nothing. Extra stories provided in Amantes are all separated from main story in special menu and easily activated by instant (F7) "skip until next choice" which let you complete main routes second time in like 2 minutes. Extra ending is easily achieved as well by skipping until final choice in Rea route. AFAIK there aren't any more differences between versions textwise except in steam Amantes here all choices and routes are unlocked from the start whereas in Fabula you have to unlock them in order. Also in Amantes are couple of replacement scenes instead of hentai but they aren't important at all.
It's all up to you which version to play, I think 4:3 is also available on the MG version of AA. Some scenes have been quite edited, I personally found the first (erotic) scene with Kei to be really weird in AF and preferred the all-ages version in AA. So yeah it's pretty personal, but enjoyable nonetheless either way.
The only thing AA don't have is the porn, which you can download the patch later after you complet the whole game
The H-scenes have absolutely no effect on the story and your experience much like 90% of the other visual novel it feel out of the place and it there just for pandering sake
