Many of these encounters involve failing multiple times to figure out the right strategy and that is just part of the game design. The fight is doable at level 3, but will require specific preparation and/or strategies that are usually learned through repeated failures. This game has many instances of encounters that require this and some (like me) enjoy the difficulty spike while others do not.
This used to be a much more common style in games of this type.

Also what difficulty are you on? Strategies that work on easy-normal do not work so well once you hit challenging. Since the roots of the game are tabletop miniatures, the actual difficulty of 'normal' in the video game version is actually easier than the default pencil and paper campaign settings. 15 point buy for a player character and monsters with a very nasty AI known as the GM.
Positioning, different weapon types, buff/control, wall of meat shields (summoning), are just a few factors that can turn an easy victory for one side into a faceplant.
Heck there is nothing wrong with hit and run too. Can't take out 3 at once? Concentrate fire on a single target and then get the heck out of dodge. Leave a nice 'Grease' spot or other obstacle on the floor to slow down your pursuers. Summons also work great if you need that extra round or two...
If you want the feeling of being god-mode, then an optimized character in story mode will be about the settings I use (and have done so when I just want to see different endings).
