If you want to customize them more than those limitations allow, there is a mod that enables you to rebuild them from the ground up.
Ah that's what it was. I'd put off levelling up to get a cheaper price on mercenaries. Thanks!
You get the first 3 respecs free, obviously also have to switch it in difficulty to enable character retrain.
After the first 3, it gets exponentially more expensive with each respec
I wasted them with a couple builds I decided not to use anyway.
Please note as well, you can't respec companions before the level you found them at. I think their levels are always the same when you find them, but not 100 percent on that. Anything past those early levels you can still respec
