Is there a way to not provoke the Defaced Sisters?
Like, what do I do? I don't want to reveal my name because of that damn crow, the sister in the barrows is dead no matter in what order I try to rescue them and apparently the local boss doesn't like me, even though I've followed the traditions and entertained him nicely. Do you absolutely HAVE to reveal your name to the crow or is it possible to avoid it?

No... the Defaced Sisters will always turn on you for plot reasons, as for the local boss:
You just need to pass a hidden religion check

When one of Sisters says something akin to "May you have blessing of Green Mother (Neutal Evil divine fey)" as a thanks, you know they are evil.

What if you change your name at the last second? Or what if someone else has the same name as you but it has a different spelling with the same pronunciation and that is the name you give the Crow? Since you are giving a different name which only sounds the same would it still have power? Then when the crow hears the Sister use your actual name would it think it was still hearing the fake name since they sound the same?

At least in Neverwinter Nights 1, they have this whole thing about SOUL names and it was only SOUL names which had power because your birth name was arbitrary and thus meaningless.

It's really stupid for someone to have some special power over you because someone else told them your arbitrary birth name. What happens if you get sent to prison and given a number? Does that arbitrary number they use to refer to you give someone as much power over you as your arbitrary birth name? There is no difference between the two.

Someone's given name that they are called is linked to that person even in a minor way. There are a number of spells that get more powerful the more you know about (been to a place or meet the person for example), or the stronger link (a body part or object from the area) you have to the target, be it a person, place, or thing. My guess is that the spell used to call the soul eaters requires some way to id the target, and wouldn't work as well if you just told them to "get that dude that leads a group of other dudes".

Also it seems like the bad guy only had a limited amount of power due to just reviving. As such he couldn't waste it sending soul eaters after everyone that was remotely powerful locally. He had to find out who was the biggest threats before he was ready for his big attack, and make sure they were taken out.

I think they just say "May you have the blessings of benevolent spirits" or some other ♥♥♥♥. Still, from other encounters with the ♥♥♥♥♥, I should've known what to expect. Fey exist only to spread misery and chaos throughout the real world. Like that ♥♥♥♥♥♥♥♥ of a First World wasn't enough for them.

Yeah, it's not like they get control over you from knowing your "true" name, they just sick their goons with a rough direction of "that guy's name", kinda like that tiefling girl. The soul eater had such a hard time finding her because he only knew her arbitrary name to track her.
I imagine you can give them a personal possession of that person or something else with a general connection and the spell would work just fine and dandy.

Then one you can turn againts Nyrrisa if you pick Good dialoge option, says something insuating she worships Green Mother(I think one you free from tomb also says something similiar), together with other Sister saying/acting like they are force of good, it is clear they are trying to deceive you.
