Worth noting is that the hydra will regenerate faster the more heads you cut without these damage forms. While in the tabletop you could keep track of it easily, here in the game I've found that with a bunch of animated skeletons "tanking" it, they kept attacking the heads and making the regeneration proc too quickly, so I only hit them with fireballs, scorching rays and Octavia's sneak attack acid arrow, one hydra at a time.
I don't know how faithful their recreation is, but I'd say bursting it down should be your best bet. Other regeneration monsters like the troll and the linnorm seemed to actually get hurt by damage types that would do 0 in the tabletop and just got knocked over and waited me to finish them with their vulnerability.
