Stat points / Ability scores
Should I go for minimum int, wis, charisma (7) for the classes that dont really use them?

Which is better 20 main stat with 7 to non-relevant stats or 18 maint stat and 8-10 to non-relevant stats.

It's highly differs on the class and preferences. I don't like to dump wis, bad will save can be your doom. If you dump charisma forget about persuasions, but I'd dump it anyway. Less int = less skill points, I'd dump it on fighter and seriously reconsider it on bard.

About the main stat... I prefer 19. You will have 5 more points from level ups, but the last one will be on lvl 20. If you go 20 the last one won't do a thing, but you will make it to 24 faster. If you go 19 you will hit 24 only on lvl 20 but you save some points for wis, that I love oh so much.

Many people like to have 19 in a main stat, but I prefer 20 because the early game is often the most difficult part of the game and the extra boost is very welcome and noticeable there. As time goes on, the game becomes easier and easier with more spells, gear, etc and a small difference in stats becomes relatively meaningless.

For builds that only really need one stat to be super high, like a Rogue needs Dex, you can start with a Dex of 20 and then try to evenly distribute the other points to make none of the other stats terrible. I think you end up with 20, 12, 12, 12, 12, 10 that way? I put the 10 in Strength because of Weapon Finesse, Finesse Training, Agile weapons, etc. That's for my main character.

For other mercs you might make, it's a function of what you want them to do. I made a Cleric of Erastil with Animal and Community domains and assumed the pet would do the tanking while the cleric did the healing and buffing. So his Str and Int were both pretty low but I made his Wisdom AND Charisma pretty high, with like a 12 in Con if I recall correctly. I forget what his Int was but he only gets 3 skill points per level, which I always put in Lore Religion, Lore Nature and Perception. I think I left the Dex reasonable for AC and initiative purposes.
