Now i am lvl 19 and just ended Pitax Quest/Chapter on unfair. I play 1 Vivisectionist/ 10 Arcane Trickster / 9 Wizard. Its probably one of the best builds for solo.
1 LVL Vivisectionist
3 LVL Wiz
Than 10 Arcane Trickster
Rest Wizard.
Race Elf
Attributes:
something like:
8 Str
18 Dex
12 Con
19 Int
10Wis
9 Cha
Rest of the Points in Int
Feats:
Accomplished Sneak Attack
Point Blank Shot
Precise Shot
Weopon Focus Ray
Spell Pene
Greater Spell Pene
All Metamagic Feats (not all are necessary)
Combat Casting
First levels u are using a bow or x-bow for kiting
After u get lvl 2 Spell Scorching ray u can kill stuff pretty fast.
So expeditious Retreat is a must for kiting
Fireball helps
Greater Invis
Cold of Cone
Transformation
Chain Lightning
Greater Heroism
Legendary Proportions
Prismatic Spray
Greater Shout ( one of the strongest spells right now, i think its bugged)
Tsunami
and whatever else.
Skills
Trickery
Perception
Use Magic Device ( soso skill..)
Knowledge Arcana
Knowledge World
And of course the Prerequisites for the Arcane Trickster Class.
Your most op Ability is invisible Thief. The ability is probably broken and makes most of the Encounters really easy.
So enjoy and have fun with this great game!

There are a few missions that require you to bring a companion, but aside from that, the game is viable to run solo. I'm not finished yet, but I'm playing a paladin/sorcerer/Dragon Disciple/Eldritch Knight, and it's working for me so far.
This guy never actually posts his build though and trying to figure it out through 22 videos is not happening lol

Started out on Challenging... was too easy.. moved it up to unfair... was too hard... settled on "hard" difficulty i think in the end?
Also after you get the amulet in Varnhold, rest time fell, and I ended all quests and KM upgrades before the 6 part of the curse, so I had to skip time then.
Companions quests require just to have them in your party, so when soloing you just add the needed companion, travel to the place of his quest, solved it, and then let him down again.
Until the House at least there is only one point where you have to split your party, but the story provide a solution for one man party. To kill Blossom Flower you have to fight both on the Primal and the Material World, if you are soloing the gnome you met in the Primal will teleport one companion to help you...one not exactly chosen randomly
The main problem when soloing is that if you want to get the best from the game you should have many skills at +20/+25/+30. That is all but easy. With my Monster Tactician I used 5 feats to increase skills.
