How to fight something that spams negative levels on you?
Is there some kind of counter to this? Seems silly. Just had an enemy use some kind of touch attack called "Ennervation" and of course this game doesn't give me any description of the spell. He just sapped all of a character's levels and they fall dead.

The spell Death Ward makes you completely immune to negative energy and negative levels. Also, there is no Protection from Neg Energy, as the guy above suggests.

For a more believably accessible counter, the 4th level cleric/inquisitor spell Death Ward will protect you entirely from the spell, and Jaethal gets temp HP from it instead since she's undead.

Also, at least enervation is temporary, not like energy drain spells or what vampire or spectres or soul eaters do...

Restoration undoes negative levels, iirc. I think the main component to avoid ennervation is to not be hit :(

Maybe use some kind of entrapment spell on the enemy so they can't run up and touch you? Kite and attack from afar, such as spamming something like Fireball with a wand so there is less casting time?

My brief glance at Pathfinder PnP rules seems to show that there's no initial saving throw against negative levels.

Oh, dang, I had read Death Ward's description but still didn't get from it that it protected against losing levels since it's kind of not exactly explicitly said.

Death ward is good, but it's hard to cover everybody. You can work around it by protecting your melee, but some enemies like to enervate your backline. I had one encounter that always spammed one specific character, but once I knew that they were easy to counter.

One nice way to deal with specters in particular is to prevent them from ever reacing melee in the first place, My favorite combo is to use Sirocco combined with Entangle, one slows them down and the other knocks them down repeatedly and kills them, you just stand there and wait for them to all run into the death zone and die.

It does.
There are two ways to handle deathward in my opinion: bring several scrolls to cover everyone (in melee) or cast it on one melee who goes solo on the level drainers.

(The nastiest level drainer thus far gave 2.880 xp and had an AC like a balor. I soloed him in the end with a fully buffed monk and the cleric on standby for healing.)

More proof Jaethal is a top tier companion. What can't she do? Tank? And even then, there's probably some crazy mofo who did just that.

That one guy behind the secret door in Vordekai's tomb? There's a trio of level drainers including one demon that looks just like that one in the same tomb if you take the rubies from the eyes of a certain statue. For some reason all three of them tried to enervate/finger of death my Paladin, possibly something to do with his auras, so I just death warded him and laughed at them. Paladin's mark of justice really helped with those fights too, one of the few times I've actually bothered with smiting.
