Btw, I simply put the difficulty to story mode, let Valerie tank (he does 1hp damage on story mode) and kept on healing her.

If you mean at Ratnook, I did that at level 5 on Unfair. Buff up, sneak in, then get Linzi & Octavia to cast Glitterdust to the left and right in front which will light up the two sneakers and hopefully blind them to boot. Make sure everyone has some protection against fire to make the Alchemist trivial - he doesn't try anything else.

After that it's simply a matter of time until you roll enough 20s to kill it.
You can also cast 1/2 projectile-type spells to deal some damage before he counters with shield.
