Level Progression

Would you share what level your party was at start of each chapter with shared xp on ?
Trying to figure the right amount of exp boost required to reach lvl 20 by endgame without ruining the experience. I need the data to figure an exponential growth multiplier not a direct one.

That can change depending on how you play, but with my 300+ play time xp share I can say:

End of Act 1: Rush: Level 4 Max: Level 6
End of Act 2: Rush: Level 8 Max: Level 10
End of Act 3: Rush: Level 11 Max: Level 12
End of Act 4: Rush: Level 13 Max: Level 14
End of Act 5: Rush: Level 14 Max: Level 15
End of Act 6: Rush: Level 15 Max: Level 17
End of Act 7: Rush: Level 16 Mex: Level 18

That could varry depending on you choices, maybe 1 level less of my experience. You could only reach level 20 if you dont have xp share active (But I do not recomend that you desable xp share,if you like to change you party members and can affect you advisors up to level 12).

I recently ended act 5 at lvl 16, with still a couple unexplored locations around the map

Yeah, that's the probllem. Enemies in Acts 6 and 7 give you less experience than enemies in Act 4... You won't get more than 1 level from now on unless you abuse the artifact shroud or something.

Just finished chapter 5 and I'm at least one third into level 16. Missed out on a couple of high-exp persuasion checks by all sounds of it too, so could've been even slightly higher.

Tip: make sure to do as many persuasion checks in Pitax as you can, as you can get a full level from those alone.

NB: I do have shared exp off, but am running with a full party, so that shouldn't make a difference other than a few thousand extra exp you may get in chapter 1 before getting the full party.
