Is there a way to overcome spell immunities
So i have octavia with spells like scorching ray, hellfire ray, even disintigrate and it seems like everything in the game has immunitiy to it. Is there some feat that I am missing or are blaster spells kinda useless past level 12ish?

What do you mean immune, are you sure you are not just missing the target? For Ray spells you have to make a successful Touch attack in order to hit. Feats like Point Blank Shot, Precise Shot and Dexterity help. Also True Strike.

As for immunities there actually is an item you can use 3 times per day, but IF you manage to get it, it will be towards the end.

I am getting hits but immune to damage, like late game common eneimes like fey, wild hunt, and bosses. It seems like all offensive spells just bounce off everything.

There is spell resistance on higher level enemies. Spell resistance is like another layer of defense against the spell after it has been hit and before they have to make a saving throw (if any). If you don't penetrate it the spell fizzles. You can see this on the enemy info if you pass the lore DC and mouse over it while you have the "inspect" button (looks like an eyeball) clicked.

To overcome spell resistance you will probably want to pick up the feats "spell penetration" and "greater spell penetration," on your casters because it becomes both stronger and more common from about level 9 onward.

Note: some enemies are immune to particular damage types...that is a different thing.

If the issues is spell resistance, then there are also Ambrosial Attire of Arcane Annihilation with +4 penetration (I think it's an Artisan item), Robe of True Master with +2 found at the Abandoned Keep and Grandmaster's Rod (Artisan's Masterwork item) which Empowers, Maximizes and ignores everything but the target's saves, including immunities.

Spell immunity is a thing. Every spell says whether it's subject to a creatures spell resistance. If it says that in the spell description, and the creature has spell immunity, the creature will be immune.

There is also spell resistance that you overcome with spell penetration feats.

Some spells simply overcome spell resistance by default. Check spell descriptions. But it is for the most part conjuration spells iirc.

For arcane trickster?
The class only gets good at level 14+, but usually ranged attacker stuff (Point Blank Shot, Precise Shot, Rapid Shot at high level (for when using Transmutation), etc.) and evocation DC stuff, since most of the spells that will get sneak dice are evocation, and the ones that don't roll to hit allow saves instead.
(Also like spell specialization: can switch to Battering Blast at level 19 so you get the 4th ray. Each ray can sneak attacks, so you can add a lot of damage with a lesser quickening rod that way.)

At high level if something is immune to spells you can just Transmutation and use a bow or something.

Overall, i avoid making her a one trick pony that only do ray spells and fire damage. I also try to have spells that target different saves for different situations, not just damage and reflex save.

Accomplish sneak attacker and Precise Shot
Greater evocation focus and conjuration focus for CC
Spell specialization to reach threshold of some spells earlier
Metamagic Heighten Spell only

Artisans Items:

Ask Sharel as soon as you get him for Robe until you get Leviathan's Gift. A powerful combo with empower rods all game long.
Leviathan's Gift: Maximize Spell up to 6 times/day (max lvl 6).

Ask Mim as soon as you get her for Necklace until you get Amulet of Four Elements

Those two items are tier 0, so you can only get them very early and they are very powerful for her or Tristian.
