So, I beat this with a sorcerer. First, I loaded up my main character with every defensive buff known to man, particularly Displacement and Mirror Image. He also had Phantasmal Web. Then I shoved the rest of the party to the far side of the map, out of the battle. I hit the manticore and the hydra with Phantasmal Web, which took them out of it non-lethally, and then just tanked the mandragora. Between Displacement and Mirror Image I think I only took damage once or twice during the whole fight, before Visaka called a halt.
Obviously, your tactics will differ based on your class, but basically disable the hydra and the manticore, tank the mandragora, and just wait.
Ups :) as Duid just tank as Earthelemental and let me heal from linzi
