Anything that is undead falls under that category.
Athach and other unnatural beings (you saw their 3rd arm?) are grouped as aberrations. All the cthulhoid monsters are in that category too.
The bonus is useful against constructs, since there are powerful golems around, undead, who are always a favorite, and fey are recurring opponents (including nymphs, redcaps, Nyrissa, the defaced sisters, etc.). Magical beasts and animals are also a theme, like hydras, owlbears and wyverns.
There are way more categories than choices, so pick what you like best, and prepare in your 3rd level spell slots instant Enemy, which turns any target in your most favored enemy.
Undead and Magical Beasts are the best two choices. Undead have almost two whole chapters dedicated to them, and Magical Beasts are everywhere. Note that Owlbears and such count as Magical Beasts, not animals. Animals are pretty much ONLY things that exist IRL, so Wolves and a couple of bears, that's it. Giant Spiders are actually Vermin in pathfinder, so they don't count either.
Humanoids (non-monstrous) are also a good pick, specifically Humans if it makes you choose.
