Which spell changed the game the most for you and why?
I know haste is going to be a big one for many people, but for me it was "Delay Poison communal".
Makes those endless fights with things that poison you and reduce your stats so trivial. Even chumps get a nat 20 sometimes and then you suddenly have a minus 3 to dex or str which is often devastating.
I was so sick of having to restore my abilities after a centipede lucked out and bit me, and now i can completely ignore them, the damage can be healed easily and im immune to their effects.
Such an amazing spell that changed how frequently i needed to rest and restore abilities.

Which one suddenly changed it for you?

There are a few. As you mentioned Delay Poison and Haste are big ones. So is resist energy (those wisps suddenly lost their teeth). Some other big ones are:
  • Displacement (all your enemies are flat-footed, and vulnerable to sneak attack)
  • Sense Vitals (now I have sneak attack to use with Displacement)
  • Sea Mantle (one of the few spells that buffs your touch AC, and +8 is a pretty big AC buff)
  • Greater Shout (even if they make the save, they're still dazed)
  • Fiery Body (I'm immune to critical hits and ability damage now)
There are a couple others, but those are the spells that really changed the difficulty for me.

Its not gamebreaking good but I really dig casting shield on dps with an alchemist (its a personnal target normally). It really help with Amiri survivability early game.

The most hilarious for me was Druid's summon Swarms, because they are immune to all physical damage and poison enemies.

Sirocco is also a faceroll spell which does about 4 times more than a single Evocation spell should.

The one that uses dinosaur bone and turns Amiri into Giant Woman is also quite fun.

Stinking Cloud it literally turns most encounters into a joke unless it's undead or a construct the enemy spends entire fight unable to move or act.

Edit: further proof of this spells power, facing 3x defaced sisters, dropped stinking cloud on them and paralyzed them and all the barbarians for the entire fight, they didnt even get to cast 1 spell

Interesting, i havent actually touched any druid, and since no companion classes have their spell list i dont even know a single spell of theirs.

Is the dinosaur bone one any different from enlarge person?

Haha, im kinda guilty of looking at a spell and going "No damage... pass" unless its a buff spell. Definitely the wrong thing to do in this game.
What does this one actually do?

It's called Legendary Proportions and is available as a 7th level Sorc/Wiz spell... it's basically like Enlarge Person's bigger, scarier brother. Two size categories, huge stat increases, pretty sure there's DR involved...

What does this one actually do?

Stinking cloud causes nausiated status which makes enemy stand there puking there guts out for the duration it effectively cripples anything thats alive including most fey, owlbears, and owlbear like treants(they can save every so often) and if you make sure to cast communal delay poison your party is immune to it.

Edit:

While DPS is nice you'll find in D&D and Pathfinder CC is usually more effective BUT that's great thing about conjuration it has a nice mix of damage, control and support.

Because the AI is extremely dumb and predictable: Siccoro, Thornspikes and Blade Barrier all become way more useful than they should be. Siccoro/Blade both stack on themselves. Unless it's fire immune, not much stands for 2+ empowered siccoros. Especially given the huge amount of Rods the game throws at you.

May only be 4d6+level damage, but that adds up when the enemies knocked prone and thornspikes makes them move slowly through it.

That sounds like it will be spectacularly OP when combined with Devourer of Metal and Hurricane Bow XD

I did not know Displacement did all that. Even the PFSRD doesn't suggest that it does anything beyond giving the enemy a 50% miss chance.

Fiery Body, Seamantle, and Sense Vitals are all in the category of "spells that would be great if they weren't personal/were cast by anyone else". I don't care if my Wizard has +8 AC and immune to criticals, he's STILL going to die if anything looks at him funny. Sense vitals isn't as bad, at least it does SOMETHING unlike AC that's less than the enemies attack bonus, but it doesn't even bring your sorc/wizard's damage up to the Fighter's level, let alone the Rogues.

I wouldn't call my sorcerer a "cannon". I drag him around for a slew of buffs and disables. Magus gets those critical spells later, if at all, and has far fewer slots for them, it's like relying on a paladin or ranger for divine/druid spells.
