On consumables, something if you wanted to dive into modding, I would disable all item drops from enemies, all items in shops, and make it so gladio skill is only way to obtain, obviously avoid doing daily quests as they drop items in large amounts different to normal drop tables.
Given there is a skill that reduces cost of auto dodge, I think it wouldnt be impossible to make the skill have the opposite effect, and then just make it a 1 AP early activation on acsension grid.
Personally i loved using it and it made combat encounters much more enjoyable.
The only way to gain more challenge in the game is to either exercise self-restraint (never buy potions, toss away potions when you have more than x amount, maybe don't buy anything for that matter, don't grind for potions, etc) and/or stuff like don't level up, using that noxp ring. Playing an all level 1 party game can be quite fun. Although if you're really familiar with the game, even that isn't actually all that "hard" because outside of abusing block/parry and i-frames as much as possible the game isn't really about any strategic difficulty, just spamming attacks until something dies, or you die.
