Chapter Select!!
I missed a lot of the datalog in chapters 10-13 and in the process of finishing menace dungeons for a total of 73. If I were to make 2 saves of my post game and use one of them for chapter select and get enough datalog for the achievement and just delete it after... could I just load up my other save without it being affected?

Chapter select will overwrite your autosaves but not manual saves so you can keep your old save with all side quests and stuff separately and return to it later. Naturally it wont have anything you have collected after using chapter select but achievements unlocked will remain.
Also ypu cant freely jump between chapters unlike some other games with that feature. It can only be done from chapter 15 (post-game).

The achievements should be linked to your profile and not to the save you're using. But the real question here would be : is Steam going to keep your achievments if you delete the save with which you obtained them? I think yes, but I'm not 100% sure.

Oh I know but I also don't want to lose all my progress from my quests and hunts! That's what I'm really asking. Sorry it wasn't clear.

Are you aware that you can return to the open world portion of the game to finish quests and things you haven't do before? (Umbra) Without losing anything and with the same save.

Yes but you can't use umbra to go back to the train station or when Noctis arrives at Gralea. I don't mind chapter selecting but I just want to know if I can get around losing my quest and hunt progress by doing 2 saves.

Archivements are upload to Steam servers and are updated in their data base permanently
on sync. So this should never happend.

thank you!! but to be clear, will it have my datalog entries of the monoliths from the menace dungeons when I chose to chapter select to a past chapter? or would I have to do all dungeons again for that chapter select save.

You will have monolith entries on the same save if you do dungeons first, save and then use chapter select from that save. Datalog data isnt lost on changing chapters. Chapter select is basically a variation of NG+ here. Stuff that is normally carried to NG+ is kept, but you lose side quests, quest items and map reveal/markers.
