This spell can randomly miss. High level enemies especially non-daemons have low success rates. In this video he just got lucky.
Just realize that the vast majority of the time you use that attack it does not activate that result. The video just shows the rare result that can 1 shot enemies that aren't immune to it.
I've had it take over 100 attempts to activate on adamantoise before. I've also had it go off on the first attempt. It's all RNG. Either way it's faster than trying to kill him with weapons or other magic.
Supposedly the chance of activating is based somewhat on magic stat so you can use gear and food buffs to increase your magic if you want. Personally I liked using XP boost gear and food because it's a fairly nice method of gaining XP without expending rare resources on XP magic.

The tutorial is only missable if you deliberately decide to skip a portion of the game.
It's usually when one of the guys says something like "We're on the home stretch now." or "Not much life left in him."
It's nice to one-shot an iron giant when you just want to get in the car and drive.
