Just uncheck it to remove it from your game. All it mostly does is give you more higher quality CGI cutscenes and somewhat better quality textures, I think (some people said it was just... OK). There's only like 3 CGI cutscenes in the game.
OOOOOOHHH, then maybe Steam just had a big brain fart. Check your game files and see how much space it takes up on your computer. It should be around 90-100GB.
If it's around there, I'm just going to assume Steam downloaded some update that replaced a bunch of files.
That download should be around 17GB though, I know because I downgraded then re-updated to do some tests.
I had Steam saying I had a huge update (60/70gb if I remember right) and it was because I moved the games install folder to a different drive and in the process Steam tweaked the stateflags component in the appmanifest so it wasn't shown as upto date. Changing it back to 4 fixed the issue. I suspect it'd need to be done quickly before Steam actually makes any changes to FFXV files or you may need to DL it all then redo the revert part again.
Obviously that only applies if the Appmanifest Stateflag is not 4.
