how do i use health potions with key board and mouse ?

I believe Tab is the key to press to get up the item menu. There are 3 menus in one too so you have to scroll left or right to get to the one with healing items.

Check controls for it.

^^^ I think the Tab key is for opening up the in-game menu options

Iirc, you can hit "T" to open up a menu in which it lets you choose from a variety of items to use. I think the default key is "T".
