Can someone explain the Starscourge?
The Starscourge is described as being microscopic organisms that turn people into Daemons as well as being organisms that absorb light, but it's been shown and said that Daemons can't survive in light and die when they are exposed to the sunlight. If all this is true, then how does the Starscourge absorb light if it is destroyed apon coming in contact with light?

No, the info is wrong. You can definitely read what the difference is in clarity from data log entries but it can be confusing for some people because it uses scientific terms.

There's the parasite known as the "the starscourge" which is an organism that infects humans.
This organism isn't in contact with light while it's in the host's body, e.g. Humans. However, when it is finished its process of taking over and killing the host, (or even if the host dies) the host is resurrected as a demon.

In this form they are ENTIRELY the parasite and weak to light, which is why demons only come out at night.

But the parasite has a defensive mechanism. It produces a photosynthetic miasma(I can't remember if this is a seperate organism or just a material) that ABSORBS light. That is the stuff that makes the sky dark. More demons means more miasma that blocks out the sun. Its a dual action process.

an interesting side note is that the star scourge actually came from the meteor that titan is holding up. So it's an alien virus infecting the planet. It is also hinted at that Ifrit chose to bring down the meteor on humanity, but probably didn't expect the virus along with it. After that Bahamut sealed him away it the volcano.

So it can only absorb the light if the crystal isn't there/active? I guess that makes a tiny sliver of sense.

Actually this is correct. That's why for the longest time, the starscourge has been kept at bay. The term "Light" used is rather vague actually. As it can be referred to the Crystal Light AND regular lights, which explains why daemon doesnt like bright areas and you can upgrade regalia with high powered beam so that you can travel safely at night.

In my opnion, the light refers to regular lights, not crystal lights. They still die when exposed to sunlight, and therefore they are constantly dying while blocking out the Sun in the World of Ruins, but are able to sustain with immense amount much more than before thanks to Niffleheim's research gone awry and the starscourge has so much more food that it used to that enables it to reproduce at such a rapid rate. The crystal was never gone, it was always there all the 10 years Noctis was inside it AND it is still active as you may see in Comrades where the Glaives still has warping ability.

Actually, i think the lore is pretty much complete pertaining to main story.

Sorry for much Spoiler, have one from Episode Prompto/base game ending

we see when Ardyn and Iedolas left the Crystal from Isomnia is the start of night most longer and the day is short, most type os Daemons appear more and more (without considering Nilfheim experiecies with Daemons), the crystal is sealed from the world in Zagnatus Nilfheim Airship and the start of the World of Ruin start.
