In your case you need to find resting place inside train.
Dossiers will get filled on their own as you progress through the game, but you're gonna have to find each and every entry from Datalog by yourself.
As for Sealbreaker's Key, sounds like bull$#!+, because when I used "Chapter Select" on PS4 to get datalog files from Chapter 10-13 I had to redo required dungeons to get that key once again. I used the savefile for "Chapter Select" which was 100% completed game (all quests and stuff gathered, including Pitioss Dungeon).
i dont understand. what does the comment mean about the sealbreaker key? to get the key i have to:-
Complete the main story
Complete Costlemark Tower
Complete Balouve Mines
Complete Crestholm Channels
Complete Daurell Caverns
i already completed the dungeons. after i complete the game i will get the key. what happens if i want to repeat chapter 10 to get the datalog that i missed? will i have to redo those dungeons again so i can get the key again?
what happens after i complete the chapter that i am repeating? will i go to the point just before i said repeat chapter?
And the only missable datalogs are in chapters 10-14. If you miss them, they're gone without a ng+. All other detalogs you can go back and get. There are also a couple of unique monsters and a recipe in those chapters. Other than that, the only "missables" are quests related to the Disc of Cauthess, which must be completed by chapter 3 or they're gone forever. There are also three recipes that you only get one of each time you play through, and two mutually exclusive monsters.
If you want to have a "perfect" file, you need to play through twice, and in-between (after the first, before the second) you should chapter select to 8 to do the quest that has three options (The Noodle quest).
*edit* Also two permanently missable quests in the un-returnable chapters, but they're obvious.
make sure that you also find the "hidden door" in these dungeons. trigger the dialog with your chocobros that there is a key blah blah... you know....
you can´t get back to chapter 10 during or after your actually gamethrough.
if you do a CHAPTERSELECT you LOOSE all your progress from your actual playthrough. all sidequests and all hunts.. all questprogress.. except items and FPs and level and XPs...
The Mainstory "begins" for you at the point from the Chapter you select.
its fine to duplicate items for example.
doing missions in chapterselect doesn´t count to your "mainsave"
Chapter select is like an NG+ but with NG+ you start at the beginning and you could do ALL the stuff you´ve missed to get a perfect save :)

I was talking more about trophies but also yea, NG+ with overpowered characters probably helps too.
As mentioned, yes you can easily miss stuff and not have a 100% complete file, forcing a NG+ and/or Chapt. Select.
Last I knew, if you NG+/Chapt. Select, Menace dungeon quest does reset, even if you keep the Key in inventory (Key-listed items remain even if a questline is reset) - you still have to re-do them. This is what happened to me in NG+. Has this changed?
So, when the Menace quests reset, can you not use the key any more? Or can you access the dungeon and just not complete the quest until later?
*edit* As an aside, this game is SOOOO close to being great about missables. But in a way that makes the few that are there even more frustrating. They're not special or interesting -- seems like the devs just forgot about them.
Edit: This is why I haven't used Chapt Select on console to play the new Chapt. 14 story content (Cerebrus, I mean, Hunter side quests/Omeg work via Umbra) because I dont want to redo the Menaces a 3rd time. :D
Chapt. select I could use just to see/do those things but it won't apply to main file (Cereb. bestiary entry) if I don't save/redo. So pffft. Maybe if they ever add a Hard mode and I do NG+ a 3rd time.
i want to see if i understood correctly:-
1) i get all the datalogs that i can and then i complete the game the first time and i get sealbreaker key. i dont do anything and i ignore the new hunts and new quests that i got due to completing the game
2) i do chapter select and i pick chapter 8
3) i do cup noodle quest and i pick shrimp
4) i continue playing game ignoring all sidequests and hunts
5) i get the missable datalogs that are in chapter 10 to 14
6) i complete the game a second time. i need to do chapter select one more time
7) i do chapter select and i pick chapter 8
8) i do cup noodle quest and i pick egg
9) i continue playing the game and i do all the sidequests and hunts that got reset and that is because i wont do chapter select again
10) i complete the game a third time
11) i do the extra stuff like new dungeons, new quests, new hunts, make the car fly and do pitioss dungeon
12) i am done and i got 100%
thus i have to do the reset hunts and sidequests during the last time i do chapter select and after i complete the game after doing the last chapter select i complete all the extra stuff like hunts, dungeons and sidequests that are available after completing the game. i should not do the extra stuff if i am going to do chapter reset because they will get reset
You can start the "third" run at chapter 8 if you want, and your datalogs will carry over (including the enemies that no longer appear by chapter 8, if you got them the first run), but you'll be missing the earlier missions and the missable quests from chapter 3. There's no way to have those missions and quests in your "completed" list unless you start your final "perfect" save at the very beginning.
But that aside, your plan is correct except that you don't need to go 8-14 after the second noodle quest. The path would be 1-14, 8, 8-15.
1) Play the game the first time and beat it, like you normally would.
2) Chapter select into chapter 8, do just the Noodle quest.
3) Play through a second time, starting wherever you like, and do everything.
You'll need to start the second main playthrough at the beginning if you want every quest complete in your log. If you just want full datalogs and you're missing some from the first time, you can start at chapter 10. You can also skip step (2) if you don't care about having all three variations of the Noodle recipe (but it only takes 15 minutes anyway).
Make sure you have level 6 and level 18 Bannerman in your enemy logs if you start your second playthrough at a later chapter, since they only show up near the beginning.
