A better question is why does Noctis have to die? Other than because Jesus Christ had to, so screw it, it's the end of the game. FFX for example had a good reason for Crybaby (and some other people) to die, that was explained and integrated within some sort of previously-established rules.
I mean, *I* can think of a good reason why Noctis should die, and it's a pretty obvious reason at that, but then I realize I'm starting to write my own story for the game...
Of course supposedly (sorta Ardyn DLC spoilers I guess) Ifrit is the one who actually brought the Starscrouge about when he got mad at humanity and brought down the meteor (I think that's the story, anyone can correct me if I have it "wrong" heh) and Ardyn was used in some fashion to deal with it, and now is an immortal carrier/can spread it around so the only way to purge it (for some reason) is have some chosen-one sap do what Bahamut wants.
Because Luna made the covenants for Noctis, Noctis saw no physical effects from using the might of the gods or summons. However, forging the covenant with Bahamut, summoning all Kings of Lucis, and taking their power into the ring most likely is what killed him.
It can be assumed that Noctis didn't phyically meet Ardyn in that spirit realm. Gladio, Ignis, and Prompto most likely found his body sitting on the throne where he absorbed the Kings.
Ardyn was a healer in ancient times who was destined to become the first King of Lucis, but by healing the people, he was actually just taking their Starscourge into himself. Long story short, (Go watch/play Episode Ardyn), he has become the embodiment of the Scourge and is why it's being spread around Eos. He's gained a position in the Empire in order to torment Noctis and the Lucian line until he can finally kill the Chosen King and consume the world in darkness as revenge against the Gods and Lucians.
By using the power of Gods and Kings combined, Noctis is able to transcend death and finally obliterate not only Ardyn's phyical body, but his soul in the beyond. This essentially wipes out the Starscourge and puts an end to Ardyn's immortality.
Using the ring of the Lucii Noctis normally is very draining (Any others suffer some form of price if the former kings accept them like Ignis going blind or Nyx dying) so using it on such a large scale kills him.
