Panic Mod Bugged?
Long story short, I took the fancy assault mech with artillery built in to its back (spoiler warning if you want to know what it is) for a test spin after getting it.

An enemy managed to clip it with a few measily SRM's, the only bit of damages it received, and my max stat pilot decided to go bonkers and eject.

Anyone else have this issue?

I play BEX, never had something like that during 100-120 h. Panic works very well -- pilots punch out without bugs and even according to situation.

I've put in around 20-30 hours in to Vanilla + and hadn't seen anything like this before. Even amongst the countless enemies I've taken out. Musta been a one off, but I'm glad you haven't experienced anything in that amount of time.

Was wondering if I should scrap it.

If you play BEX, there must be pilot quirks which could influence the panic. I think there were some with an insta-eject chance.

Nah, your pilot was just embarrassed to pilot the MAZ version in public! (It's not a great mech)

Agreed, I've also played ~100 hours with BEX and never seen anything like this. Their pilot quirks would be the first thing to check.

I have seen an AI pilot or two bug out fairly quickly in the right circumstances with panic factors piled quickly - quick damage in the rear, exposed structure, head hit, that kind of thing.

If it was an SRM hit, maybe you lucked out with a few head hits? It might not have looked like much afterwards because they were piled on the head location that got destroyed by the ejection.

But... but... big gun go boom!

Slapped some gauss rifles on it for some extra smashyness, too, but I find my Marauder doing way more work by the time the big guy gets in range. Makes base destruction missions a bit more satisfying, at least. Or any megacity showdown where I can level a city block just because I can.

That's what I'm thinking. Instead of investigating I was too busy going 'wtf' and immediately wanting to fire the pilot.

There is a pilot quirk that increases the pilot's chance of ejection in BEX. I've had a pilot eject because they took enough stability damage to get knocked over even though no location lost more than half its armor.
