Your advice is to state the obvious like people aren't doing that - the point of the entire game - then acting like you're a genius for doing so. gj on that.
You may not have found the parts yet since they are a bit rare, but there are cockpit mod enhancements that can nullify an extra set of injuries, up to ++ (I assume there may be better) which gives you three extra injuries ignored is the best I have found. I have enough to cover my whole lance and then some at a bit over 120 weeks in... And I can say that in earlier weeks, injuries were almost a non issue.
That being said, headshots were never a reliable way to inflict injury. The chance of headshot (on anything other than a called shot with a pilot that has called shot mastery -- they get 16-18% chacne to hit head) is mostly just pure luck, nothing more. I have had RNG stunts myself like missing two melee hits (95% chance to hit!) on an 80T vehicle, then hitting it with 90+ LRMs and watching it still survive, then rip me in half.
If you want captures, get one (or two) dedicated LRM mechs with nice stability ++ LRMs, park those guys behind hills or a safe ways away (They can drop a lot of armor, especially rear armor to fit all this) and just wreck everything to want to capture. Knockdowns, knockdowns. Blowing L/R torso is an easy way to get some injuries, but not the most reliable way to get captures, especially when fighting mechs with very poor armor upkeep.
Using the above method I have enjoyed a nice amount of intact salvage, and usually can guarantee at least one intact mech salvage on a mission. My favorite combo has got to be on hilly landscapes, keeping all my mechs hidden, then just scanning a target and knocking them down with LRMs until they die from fall damage!
As long as they don't pop the cockpit it's not that much of an issue, if you have a few backup pilots to bridge the medbay time.
But I am also a dirty, dirty savescummer when it comes to my favorites taking a killshot. I also tend to eject my pilots, if the cockpit is almost destroyed and the next hit would destroy it.
As long as you don't take an AC/20 to the face it's usually just a few weeks in the medbay.
Upgrade the medbays, skill guts sufficiently and have a rotating pilot roster is my personal solution for the problem. The AI doesn't cheat, but when you're fighting eight assault mechs, you're bound to eat a few headshots.
Edit: Also pray, you find some cockpit mods that let you ignore injuries. The cockpit mod +++ usually keeps you out of the hospital.
With 1-2% chance of cockpit hits and dozens if not hundreds of missiles and projectiles fired in the average battle, you WILL encounter headshots. Was just as much part of the tabletop game as it is in this particular game.
Keep your mechs moving, jumping, using bulwark, vigilance, etc. Circle around to hit your enemies flanks and rear armor. Pull back and flank at long range. Lots and lots of different tactical options at your fingertips that can all contribute to make your mechs less vulnerable to cockpit damage.
