While maybe you can set up some normal mines and hope a boss spawns on them after they arm, you generally won't have much luck getting things to step on the explosives after a delay so spider mines are good. They've got a huge range, too.
There isn't really a ton of tricks to playing him well (or poorly).
He's very reliant on his turrets and since they're AI controlled that sort of takes a lot of skill out of engineer. If you suck you'll be brought up to the level of his AI turrets and if you don't you'll be brought down to it. Just put them somewhere where they can see things and not directly against a wall and you've reached his peak.
He can scale with just about anything well, and has some unique use with bustling fungus.
