How is RoR2 difficulty and how customizable it can be? Also is there an ending?
I'm asking because the whole contact I've had with it is by watching some streamers on Twitch. And to be honest, the game seems strangely on the easy side. It seems like it's pretty normal to get very good upgrades and become a immortal tank that can face anything. While this is certainly fun for a lot of people, I'm definitely looking for something more on the challenging side of stuff.

Also, for what I understand, after you finish the game you keep looping the content endlessly or is there a final boss with an ending?

The streamers are possibly just very experienced at the game.

Yes, there's a final boss with an ending. There's actually multiple paths to different final bosses, one of which is enabled by the DLC.

Is there a good customization of difficulty? Are there modifiers that can be added or something like it?

Yep! There's a difficulty selection at the beginning (drizzle, rainstorm, monsoon) that determines how fast the run difficulty scales, and you can also unlock "artifacts," which apply permanent modifiers to the run. Some of these are mostly beneficial, like command (choose your items instead of letting rng decide), some are challenges like evolution (which gives the monsters items), and some are mixed bags like swarms. (2x the monsters but they all have half health)

some are funny like dissonance (monsters spawn on maps they wouldn't normally)

if artifacts aren't enough for you you can always try mods and get your teeth kicked in that way

One thing that needs to be said, there is VERY, VERY little content locked behind playing the highest difficulty. You can unlock 99% present of the content and ALL the characters just fine even on the easiest setting, heck. It even allows you to use the built in cheat system without locking you out of unlocks

With 2 final bosses, there are 4 ways to "end" the game, 5 if you count dying. haha
This game is challenging and fun. The lore is in the logbook, which is well done. Even if you get good loot, going to certain areas can be still difficult.

Eclipse is pretty hard,
And if that isn't enough you can get a mod that adds two new difficulties
