Lunar bazaar items can compensate for bad drops. Transcendence will cover up healing minimum alone, rotbloom can make mediocre life gain decent, strides can give evasion and healing if you can give up move it replaced. Even glass bone may let nuke boss if you dont catch oneshot.
Going for early Void fields can give large boost and as last ditch effort - Sacrifice artifact to speed process.
Ideally get yourself a Please Forgive Me, at least two Fuel Cells, a Soulbound Catalyst, and a metric ton of Will O The Wisps and Gasoline cans. And a Gesture of the Drowned, or else just set up a macro to send the Q key on infinite loop. Pretty much auto-wipes Mithrix.

End of game report doesn't show your equipment item, but it was Forgive Me Please. Note the very large stacks of Wisp and Gas Cans.
Edit: Oh, right, also, the towers from phase 2 are mostly safe from his pizza blasts, but it's not a guarantee. Good characters for this fight include Bandit with throwing knife, a purity or two, and plenty of secondaries, using smoke bomb, shots, and daggers to always stay in the air and nullify his downswing's main threat, engie with spidermines and feathers to tower, since the only threat he has is pizza blast witb you up there, so you can just rain homing bombs on him, and Arti, who can sort of do what both the previous two can, but with ion surge to fly. The elevated platforms around the rim are also mostly safe, again, minding the pizza blast.
The main things you don't want to bring with you are ATK Missiles and Ukuleles (If you're doing a fully solo run without drones, and you're not Engi, you CAN bring Ukes, but... Why bother really? I just scrap them to be safe).
Either of those items can and will mean he just obliterates you with no chance of surviving in his final phase.
Everything else is reasonably safe.
The only times I've died against him on long runs like that have been because he hit an ally and Uke proc'd, or else a freaking WALL of ATG Missiles came after me and there was nothing I could do.
if your really lucky and get the lightning elite item to turn you into one, its effect on making all your hits strike twice is excellent for mithrix's final phase. but this is a pure chance item i wouldnt go for, but if you happen to see it, rework your whole plan for this being apart of it.
avoid items that mithrix can trigger or greatly benefit from, always keep in mind he will use your loadout against you, stacking 22 crowbars? have fun being 1 shotted. stacking shards of glass? hope HE has fun being one shotted. for his item steal phase its always a good idea to have a plan for how to deal with it safely. sometimes this is as simple as having an equipment that will score lots of hits to get you some items back so you can function a bit better. other plans its to have something to heal with or increase mobility to get away from him when needed or avoid some of his more painful attacks.
have a plan before your even there, be ready to adjust that plan based on what you get.
Stage 2 - 4:00
Stage 3 - 9:00 (this lets you grab the Preon if you get Delta)
Stage 4 - 14:00
Stage 5 - 21:00 (try not to get into this stage any faster or you'll increase the risk of a Horde of Many boss)
Commencement - 30:00
If you can get to Mithrix before the 40:00 mark he'll generally be weak enough to where you can kill him from just playing well, regardless of your items. If you get to him between 40:00 and 45:00 there will be less room for error but killing him is still reasonable. If you take longer than 45:00 to engage him you're going to need either perfect play or insane items to take him out. These times are estimates assuming you're not using any Lunars or doing Void Fields so if you use either of those, you can give yourself a big advantage by going this fast.
There are some players (like Race) who consistently beat E8 by engaging Mithrix as late as the 60:00 minute mark but they have absolutely insane skill and gameplay knowledge so they know exactly what they're doing. I wouldn't recommend following in their footsteps.
I tried speeding through but most of those runs end up as bust thanks to always lacking in either healing or mobility. Tbh the most consistent way for me is to either stay longer on stage 4 and 5 emptying most of the level before leaving. I'm still kinda stuck but I'm consistently getting to mithrix without much trouble unless its the lunar chimeras then I may just roll over and die immediately.
