So my guess is, Void entities capture anything they see as valuable and study it, torture it, or both, and possibly use that knowledge to fight "theoretical armies with more resilient hearts and more evasive bodies". It SEEMS that, when they capture you, you are placed in the Simulacrum, where they force you to go through endless scenarios. Planetarium description sees our POV of someone trapped there, and in some iterations, they escape and create a family, a life, just for them to end up back at the Simulacrum, supposedly because the Void creatures got what they wanted from that iteration. I am still missing some logs, especially the Voidling's, so I am still missing info.
As for the other questions? IMO, Voidling seems to be a "child" of the Void, or Void incarnate. I don't know how to explain why I think that, it's just that its name implies that it is either small or unique in the Void. It's the most enormous, powerful entity in the Void we've discovered, but it isn't named "devourer", "destroyer", etc etc, just...Voidling.
My guess is that we didn't come back from the Void once we defeated the Voidling. Jailor's description implies once you reach/are taken to the Void, you only go deeper down, but there's no way to know what truly happened. Called "Fate Unknown" for a reason.
Finally, my bet is that void creatures appear once they sense something grows "out of control". They ONLY show up after a loop, at which point our character has grown strong and is literally massacring thousands, so maybe they pop up when they need to put down a threat.
