The demons surely block more, but if you're talking about you attacking and they still attack you back, that means they entered their DT mode. You can see that they get a purple aura around them. Their DT is strong af. It is activated by 1) letting them live long enough; 2) If you kill 2 or 3 other enemies near them. The thing is, you need to avoid the DT demons by killing them fast, AND not killing a demon and let the others with full health -> this means you have to kill all other DT demons with full healh, and they have like 4x the deffense they had without DT. So you need to weaken the demons before start killing, and fast, because if they enter DT mode, it's better if they already have low health. The stronger the demon, more priority to kill it has.
I normally use as gear:
- Rebellion
- Bewolf
- Pistols (can't remember the name)
- Rocket Launcher (can't remember the name)
- Lvl 3 SwordMaster
The Lvl3 attack from Bewolf can really help you on some of the bosses and mini-bosses as deals a lot damage.
To help you with DMD, consider complete the game on easy mode, and buy a lot of Green Stars to refill your health when needed. To farm orbs, you can beat the hell out of Vergil in mission 20, and in 1 or 2 minutes you can easily get an S and get like 15k red orbs. it becomes fast and easy if you repeat the boss and learn his weakpoints.
Do get all the blue orbs and buy all the purple orbs as well. Upgrade all the weapons too.

Best solution is just to stop attacking and let them take a swing at you, dodge the attack then start attacking. As Mugetsu stated above efficiency is very important on DMD.
Another useful tips:
Taunt a lot. The higher the style, the better. You get a lot of DT filled by tauting.
Hold your DT button down and charge your DT and use it against bosses and mini bosses. You can deal a lot of damage this way.
And if you're just trying to finish DMD without caring for the level score, just avoid any unnecessary fights. If you can proceed without fighting, do so.
