The exploits chivalry had but are not present in Mordhau are reverse overheads, backswings and 360 spin attacks. The first two existed because the weapon could do damage in windup phase. The third one because there was no turncaps and glancing blow. Chiv2 still has those exploits.
Wessex's, cucumbers and stuff like that are not intended but the devs made some tweaks to make them really hard to pull off. They are very unreliable and this is the reason they are never being used by the best players. I don't think they are much of a problem because you'll encounter such moves very rarely in the game.
Now about chiv 2 there are videos that show the exploits. They were posted in previous discussions. I'll try to find them again and repost them.
Held block helps against all kinds of attacks so maybe that's why they didn't bother to fix them.
