Where is the option to quit game from menu?

I can only exit this game from task manager. When I press esc during the tutorial it takes me to the customization menu. On the main menu there is the box encouraging me to play the tutorial that I can't close because clicking on "hide news" does nothing. It appears that below the top bar it's not properly registering where I hover my cursor

top right there should be an exit button. Looks like an open door with an arrow if memory serves.

Yeh clicking on that does nothing

Alt + F4 works fine

It's cursor offset due to game opening in full screen but in wrong resolution. Because of the cursor offset I can't access the menu to fix the resolution.

You can change the resolution manually in the configuration files. The one that changes resolution, on Windows 8 at least, appears to be stored in this path

C:\Users\[YOURNAME]\AppData\Local\Mordhau\Saved\Config\WindowsClient

and is named GameUserSettings.ini. There are two values, ResolutionSizeX and ResolutionSizeY. Try changing these to make the icon fit so you can access the menu and get things running properly.
