How to play horde with a friend?
Whenever we find a nice server with no players, another 4 people join after a while...

You can just join from the Steam friendlist.

Then what are you asking? You're asking how to play with a friend, that's how.
If you mean exclusively the two of you, host your own server, set the player count to 2 max. Horde servers by default have 6 slots, and you'll be glad of it too when you get to wave 15+.

I think he meant the game requires someone to join a server first instead of joining all together as a team to “book” spaces for teammates

Hi OP, it’s better to tell your friends the server name first before joining. The game starts assigning pub when someone joins a server. So you and your friends could press the join button at the same time

I would but i've had a problem with port forwarding for years now, which has left me unable to do it...
