You say that until you get get ganked by a naked man with a dagger while your team watches in disbelief.
Thats because dagger is a secondary weapon. It has the fastest draw speed of all weapons.
Second, bastard sword and messer is better 1handers than rapier. But it all comes down to playstyle really. Its not the weapons who win the fight, its the players.
Rapier is best when you're a 1h playtime newbie. Rapier is the one of the worst weapons in the game to use if you're high skilled (even the pan is superior).
Speak for yourself. Maybe it's a meme to you, but I love the dagger. Still, we all have our definitions of meme weapons. The recurve bow seems like a toy to me, but another player would say that it's a good weapon.

I can kill noobs with a degger too, but i will just have to try harder. that is all.
Rapier seems powerful to beginners because it can do some cheesy kills with it's speed and gamble potential. However most of the people that use fast spammy weapons are very predictable. If you know how they think you can beat them with ease. They are like one-trick ponies. There are other more versatile weapons able to do far more deadly mix-ups.
Dagger is very cheap, you can't expect it to be as good as the more expensive weapons.

Anyway, Axe, Falchion, Messer and Bastard Sword are all pretty good one handed weapons. Lots of people also really like the Arming Sword, but I can't use it effectively myself.
The main advantage of one handed weapons is that they are cheap enough that you can afford to be quite versatile in your lodout design. I can quite reasonably afford a Falchion, Shield and Throwing Axes for a cost close to that of most two handed weapons. It's certainly not the best for dueling, but it is still quite effective. The ability to throw an axe at someone's head whenever is pretty good.
Lots of people also like the Heavy Handaxe. I really don't like it because it's more of a short two handed weapon than a one handed weapon.
The Falchion is fast enough that I can interrupt slow enemy strikes and punish misses.
