I made a watermelon and an eggplant. A tomato too. and banana.

I also have a gnome and a caveman

Also made a Despicable Me Minion, started as an inside joke but actually worked pretty well.

Not a cosplay, but I was also the heavyweight champion. Fighting swords with fists is surprisingly fun.

Getting a few friends and doing a Roman legionnaire is fun as well.

Minecraft Steve is fun. So is Shrek. Those are way too common, though.
