Orcs or a similar equivilent would be fun to have something larger than you to fight. Highly resistant to grappling, larger reach, more durable, etc.
Goblins or such would provide a fun fodder enemy, be fun to boot and throw, and could perhaps have some unconventional attacks such as leaping at you, or fast hit and run tactics.
Elves would be cool if the dev could up the AI's "Skill level" to do them justice. Faster and more evasive than most. Also beware the archers putting out arrows at an uncomfortable rate.
Perhaps armoured Dwarves with tower shields and stab proof helmets.
Lots of other posibilities. Is fun to imagine for now at least.
Dishonored style teleport magic is also a really nice idea to be honest. Would allow for some stylish classic teleport kills.
Just blink behind and enemy and then Stab him with the Dagger.
