I *think* it might be possible to trick the game regarding your real height using OVR advanced settings.

That's how some people claim to be playing Pavlov while seated (that title also has no seated mode support for no reason whatsoever). Now, I haven't tried that, but if it works, it should give you normal height while in the helmet.
In my experience playing titles that require mobility while seated in a chair limits your upper body mobility by a factor or two or 4. It is MUCH easier to dodge something when you stand, compared to when you sit even if you don't step to the side.
However, I don't see why you wouldn't be able to play and finish blade and sorcery in a chair., once you find some way to add height offset.
I'd recommend to grab OVR advanced settings (they're free) and then try to tune the game with it. If it doesn't work, refund.
For a chair gamer such as yourself I would suggest using spears or bows to keep your enemy at range, and make sure not to allow an opening to your back.
A very good game for sitting exclusively in your chair would be VTOL VR. It's got nothing in common with this game, but you certainly won't be disadvantaged due to your movement style.
The biggest problem was picking up dropped weapons. (EDIT. . now I know how this works. . is awesome) It was messy. I could sort of grab them but had trouble shifting them around. There are likely mods that would help. For the price I would still think it was worth it. 2 hours should give you a good sense (as far as the refund policy goes on steam)
It will be also be harder doing stuff like throwing knives playthrough (Medieval Mega Pack), if you put them on your hip. Because of the armrests.
Anything that fits into shoulder slot, however should be good to go, and it is always possible to just wipe everything with magic.
You can use telekinesis to bring weapons to you.
Dunno how operating the book would be though unfortunately
but yeah unfortunately not many VR games are disabled friendly as far as I'm aware
