Medieval Mega Pack is a highly recommended mod. It adds literally hundreds of great weapons to the game.
The Outer Rim (Star Wars Mod) is also fantastic, adding blasters, lightsabers and more (even a jetpack). The lightsabers look, sound, and feel amazing. It also adds different enemy spawns, e.g Jedi, Sith, Tuskans etc, and options for greater numbers (pun intended) than vanilla. Going full Anakin Skywalker on 10 Tuskan Raiders for example, is great fun.
A few other mods that I would recommend are Lift Everywhere, which allows you to grab and handle NPCs in more places than vanilla and Armament Haki, which gives you armoured hands/wrists, allowing you to block weapon swings (good for making unarmed combat more fun).
I also have healing spell and force push which are nice to have.
There are plenty of other great mods out there too. Downloadable Content channel on YouTube does a lot of mod showcases. A lot of mods still haven't been updated to the most recent version of the game, but all the ones I mentioned above have either been updated or still work in their current form.

Carnage reborn is ass. It's fun for like 5 minutes then it just gets over the top. Plus it's quality leaves a lot to be desired. Only run realistic bleeding and you'll appreciate the minimalism more.
